This week in Healthy habits we talked about the importance of breakfast! Do you know that breakfast gives your body energy to start the day and helpsget your brain started in the morning? We do! Eating a balanced breakfast that includes whole grains, fruit, and a low-fat protein help kids to focus during the day. With Halloween just around the corner we decided to make healthy snack of toasted pumpkin seeds in stead of breakfast. Who can resist ooey-gooey pumpking guts?! To get in on the action at home, follow the recipe below!

Toasted Pumpkin Seeds
(yields approx. 3 cups)

Prep Time: 10 minutes      Cook Time: 15 minutes

2 medium pumpkins
3 tbsp. Olive Oil
3 tsp. garlic powder
2 tsp. onion powder
2 tsp. salt
Pepper to taste

1. Preheat over to 4000
2. Remove pumpkin seeds from pumpkin and separate seeds from pulp
3. Place seeds in a colander, rinse thoroughly, then pat dry with a paper towel removing as much moisture as possible
4. In a medium sized bowl, combine pumpkin seeds and olive oil; stir to coat seeds evenly
5. Add garlic and onion powder to bowl; stir
6. Spread seeds in a single layer on an un-greased cookie sheet (a second sheet may be necessary,) and sprinkle seeds with salt & pepper
7. Place cookie sheets in preheated oven and bake for 10-15 minutes, turning every five minutes until seeds are a golden brown
